Can't get my PC back to my native resolution?

I have 3 monitors. All 3 are different but have a 1920x1080 resolution. Ever since i got the Oculus, it changed my main monitor to a 3840x2160 resolution with everything scaled to 200%. while it may look similar, many of the games I want to play on my PC require a 1920x1080 resolution. anything higher and it causes the game to become really choppy. Every time I try to switch my resolution in the windows settings, it says "Would you like to keep changes?" and I say yes but it switches back to 3840x2160. I want to go back to 1920x1080. Even when I try to update my Nvidia drivers through their app, the app crashes and says there was error. I can't even open up the driver updater. Does anyone know of any fixes to this? If I'm missing any information needed for this to be fixed please leave what i need to edit in the comments below.

What I want to fix is the resolution not being able to be changed back to 1920x1080.
