The only thing you can do with the Rift and your Xbox combined is to stream games from Xbox to PC and then play them on a big screen in VR.
But a PC is absolutely necessary. Without one you cannot use the Rift.

I don't think that it's unusual that the HDMI isn't detected any longer when the USB connection fails. Since the headset is powered over USB, it is as if you would plug in a non-powered monitor, which would also not be recognized by your computer.
As far as motherboard, you're probably fine with any decent brand. Generally you get what you pay for so keep that in mind.
